Soft Glazed Pumpkin Sugar Cookies

Soft Glazed Pumpkin Sugar Cookies 

1/2 cup softened butter 
1/2 cup vegetable oil
1/2 cup pumpkin canned puree (I added a little more) 
1 cup sugar 
1/2 cup powdered sugar 
1/2 teaspoon vanilla
2 eggs
4 cups flour
1/4 teaspoon baking soda
1/4 teaspoon cream of tartar 
1/2 teaspoon salt
1/2 teaspoon pumkpin pie spice 


Glaze
3 cups powdered sugar
4 tablespoons water
1/4 teaspoon pumkpin pie spice

Preheat oven to 350 degrees. Line baking sheet with parchment paper. Mix butter, pumpkin,  oil, sugars, vanilla, and eggs together. Then add in your dry ingredients and mix til smooth. Make a small 1 inch ball and flatten using the bottom of a glass. If the dough sticks to it dip the glass in sugar before flattening. Bake for 9 to 10 minutes. 

While cookies bake, stir together the ingredients for the glaze...mix until smooth. 

Once cookies are done baking, cool on the baking sheet before transferring to your cooling rack. Spread the glaze in the center of the cookie while still a little warm. Then let the frosting harden or you can eat them warm, they will be a little messier eating them still warm.
